101 Year Old Makes Taccu con lo zí

Rosina, who has the energy of someone in her 70’s will amaze you with her vibrancy and agility as she heads to her backyard garden to pick fresh herbs to make this recipe, Taccu con lo zí, a pasta soup from the Grottomare region of Marche. Rosina explains when the wet pasta hits the oil it makes a “zi” sound, hence the name. The recipe calls for good quality guanciale or pancetta along with flour, eggs, olive oil, onions and a little salt dissolved in water.
